We are two weeks into the new year now and our resolve is starting to weaken – fruit is getting sniffed at in favour of something a little more interesting for the post swim snack and low fat yogurt is not hitting the spot. So, the search was on to finalise the cookie recipe once and for all….. so here we are.
Made with no flour or butter, they contain half spoon sugar, high cocoa chocolate and nut butter. These cookies feel indulgent and decadent without the guilt. Wonderful from the oven but can be zapped for 10 seconds in the microwave later to relive the melting chocolate chunks experience with a glass of milk.
I used chunky cashew nut butter for these but guess that any sugar free whole food nut butter would work – try hazelnut, peanut or almond instead. These are quick, easy and hit the spot. Enjoy!
Ultimate Healthy Chocolate Cookies – makes 12
1 cup nut butter
1/2 cup half spoon sugar
1 teaspoon vanilla extract
1 egg plus 1 yolk
1/2 cup good quality cocoa powder
1 tsp bicarbonate of soda
100g high cocoa dark chocolate, chopped
Maldon sea salt to finish
Preheat the oven to Gas 6/350dg.
Combine all the ingredients in a bowl and mix well. This mixture is a bit stiff so you may want to get the Kitchenaid out or you’ll give your mixing arm a good workout.
Divide into 12 balls and space well on a baking sheet lined with greaseproof paper or a silicone liner. Squish each with a fork and pop in the oven for 7-8 minutes.
Sprinkle with Maldon salt flakes just after they come out of the oven.
Leave to cool for 5 minutes before transferring to a wire tray to cool completely.
