I totally love figs and try and sneak them into all sorts of things at this time of year. High in natural sugars, minerals and soluble fibre, figs are rich in minerals including potassium, calcium, magnesium, iron and copper and are a good source of numerous vitamins. They are naturally sweet and complement so many things – a good, pokey Stilton cheese, sliced over your morning cereal, baked with mascarpone served on the side……ahhhh!
Now in season, buy a bowlful and enjoy them while they’re here. Today, I have put together a few vitamin packed wraps for a couple of passing job searching teenagers. On the table in less than 10 minutes. Wholegrain seeded wraps, hummus, sweet figs, sliced avocado, salty hot flash fried halloumi embedded in some fresh rocket and drizzled with sweet chilli and ginger sauce. Wrapped, chomped, gone – delicious!
