Strawberry and Chia Pancakes

Good Morning Sunshine!

A day of hard swimming awaits so we start off with a tasty, nutritious and slow burning treat today. Quick and most importantly, popular. They’ll down these no problem at all, leaving them full until lunchtime. Serve outside in the sun – while you can.

Strawberry and Chia Pancakes – makes 8/10

2 ripe bananas, mashed

2 organic eggs

2oz/50g rolled oats

2oz/50g wholemeal flour

25ml/1 fl oz milk

5 oz/150g strawberries, chopped small

Good pinch of cinnamon

1 tbsp chia seeds

1 tbsp coconut oil

Yoghurt, honey and seeds for the side

 

Peel and mash the bananas in a bowl and then add the eggs, oats, flour, chia, milk and cinnamon. Mix well and then add the berries, Fold in until mixture is combined.

Melt half the coconut oil in a large frying pan and add a scoop of the mixture (I use an ice cream scoop) to the pan. I generally make about 4 at a time. Fry for about 3 minutes a side, turning with a fish slice.

They will be quite soft when you remove them from the pan but transfer to a platter while you are cooking the others and they’ll firm up. Heat the rest of the oil and cook the rest.

Serve with yoghurt, berries, seeds and honey.
